It’s no surprise that sweet potatoes are at the top of nearly everyone’s healthiest foods list. Heres the perfect dish for a winter morning.
Ingredients:
1 sweet potato, scrubbed well
ΒΌ cup organic yoghurt or coconut yoghurt
1 tablespoon pure maple syrup or raw honey
2 tablespoons chopped nuts (walnuts, cashews, almonds, etc.)
Method:
Heat the oven to 180c
Pierce the sweet potato several times with a sharp knife
Wrap the sweet potato tightly in foil and bake until tender about 40 to 50 minutes. Remove from the oven and let cool.
Open the sweet potato across the top, cutting in half with a knife. Spoon on the yoghurt, then the maple syrup or honey. Sprinkle with nuts, and serve. (You could also top with granola or banana!)
*You can make 2-3 sweet potatoes at a time and keep the others in the fridge for up to 3 days. To warm a precooked sweet potato, place it in a microwave for 1-2 minutes until warm.
