Raspberry Blast Bliss Balls

Summer for me is all about BERRIES and I can’t get enough of them. Not only are they deliciously sweet and juicy right now, but they are also quite cheap. My greengrocer is selling 3 punnets (250g each) of plump blueberries for $4.00 and 2 punnets of big sweet raspberries for $5.00.

When I find berries at this great price, I usually buy lots and freeze them. They freeze really well and last for about 6 months in the freezer, which means I have delicious berries whenever I feel like making smoothies or sorbets and, now, bliss balls!

 

What you need

  • ½ cup natural almonds
  • ½ cup raw cashews
  • ½ cup desiccated coconut
  • ¼ cup quinoa flakes
  • 1 cup frozen raspberries
  • 5 Madjool dates

 

What to do

Place all the ingredients into a food processor and process until well combined.

Take some of the mixture and roll into ball. You can make them whatever size you like. Repeat with remaining mixture.

Roll them in extra desiccated coconut for an extra coconut flavour.

I know it’s hard to resist shoving one in your mouth right away, but trust me, they taste even better if you refrigerate the Raspberry Blast Bliss Balls for at least 30 minutes.

Store the Raspberry Blast Bliss Balls in an airtight container in the fridge for up to 5-7 days or freeze to keep longer.
