Well, we’ve been making this salad again and again over the last few weeks. We’ve had it with buckwheat empanadas where the tangy grapefruit dressing cut through the richness of the pastry, and we’ve partnered it with some grilled fish tacos for some much-needed crunch. It’s the perfect weeknight salad when you just can’t be bothered but still want something delicious! We think the grapefruit juice is enough of a dressing, but feel free to add some olive oil if you wish.
INGREDIENTS
- 1 tbsp – sesame seeds
- 0.25 – red cabbage
- 1 – pink grapefruit
- Salt and pepper to taste
METHOD
1. Toast the sesame seeds in a pan over medium heat and remove once they start to become golden. Set aside.
2. Finely slice the cabbage and put in a serving bowl
3. Segment the grapefruit, add to the cabbage, and then tip in the juices from the chopping board as well.
4. Add the sesame seeds and toss. That’s it!
