NOT SO SUSHI BOWLS – From Keep It Simple with Shani

I am obsessed with this meal! The flavours are insane & it’s is so healthy – a perfect light meal for dinner! Sushi has inspired this meal, right from the nori sheets to the riceberry rice from @ecoorganics_au .
Sea vegetables like Nori are great to include in your diet as they are low carb, contain lots of micro nutrients & they help detoxify the body! Nori is great for people with thyroid issues & people with gut issues, did you know that Nori is anti-parasitic & anti-bacterial?

Simple Recipe: 

Arrange the following ingredients in a bowl:

  • 1 handful of bean shoots
  • 1 handful of sugar snap peas
  • 1 handful of +1/4 avocado, finely sliced
  • 1/2 packet of rice berry rice from @ecoorganics_au
  • 1/2 nori sheet, cut into strips
  • 1/4 capsicum, cut into strips
  • 1/4 cucumber, cut into strips
  • 1 spring onion, finely chopped
  • a wedge of lemon sesame seeds to serve

For the dressing:

  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon Tamari
  • few drops sesame oil
  • 1 tablespoon Tahini
  • a squeeze of lemon
  • a drizzle of olive oil
  • 1 teaspoon tamarind paste (optional)

What to do?

  1. Mix all ingredients in a bowl until combined.
