Bunch of kale – finely chopped
1 cup shredded carrots
1/2 small red onion, diced
1/3 cup chopped parsley
1/4 cup flaked almonds
1/2 avocado, diced
Dressing:
Kale – can be very bitter and is best paired with citrus-based dressings, which helps break down its tough texture and tone down its strong flavor.

2 small oranges, juiced or 1 large orange, juiced
2 Tbsp balsamic vinegar
2 Tbsp honey
1 clove garlic, peeled and crushed
Pink Himalayan salt
Freshly ground black pepper
3/4 cup extra-virgin olive oil
or this…
1 Tbsp pine nuts
1 Tbsp cranberries
3/4 cup olive oil
Sea salt and fresh cracked pepper
1/4 cup tahini
1 tablespoon of honey
4 Tbsp fresh lemon juice, or more!
How to make your dressing:
For both dressings, whisk everything together in a bowl or ziplock sandwich bag and add your honey to taste. The freshness lifts the dressing!
