I’ve made my fruit cake recipe countless times over the Christmas seasons (and even not during Christmas). It’s the BEST! People just can’t get enough…
Ingredients
1 ½ cups almond meal
1/4 tsp sea salt
1 tsp baking powder
½ cup chopped dried dates
1 cup dried raisins, cherries or cranberries (or a mix of all 3!)
1 cup crushed walnuts
4 eggs (beaten)
2 TBSP coconut oil
1 TBSP coconut sugar or maple syrup
1 TBSP vanilla
Zest of 1 orange
Zest of 1 lemon
Method
- Preheat oven to 160C (fan forced)
- Combine almond flour, salt and baking soda in a bowl
- Stir in fruits and nuts
- In a separate bowl combine remaining ingredients
- Mix wet ingredients with dry ingredients
- Pour into a lined loaf tin and bake for 40-45 mins until cooked through
- Allow to cool in tin before serving
