Before the days of energy bars and protein shakes, humans would source the essential nutrients that they required to live their active lives from nature. Among these natural food sources was the Chia seed, which provided them with sustainable energy and a significant amount of nutrition with very few calories. The word ‘Chia’ is in fact an ancient Mayan word for ‘strength’.
Chia seeds have recently been discovered as a modern day super-food, as they are loaded with fibre, protein and Omega-3 fatty acids. They are also whole grain, gluten free and contain a high amount of antioxidants.
I am going to share with you one of my favourite recipes; apricot, date and Chia seed slice. I love the natural, long lasting energy that this slice provides, minus all the hidden additives that store bought bars and snacks often include.
All you need is a good quality food processor (I use the ‘Jamie Oliver’ by Phillips), some baking paper, a wooden spoon and a small baking dish!
Ingredients:
1 cup of dried apricots
1 cup of pitted Medjool dates
2 tablespoons of Chia seeds
1 cup of raw pumpkin seeds
1 pinch of cinnamon
2 tablespoons of white chocolate chips
Method:
1. Place the dried apricots, dates, Chia seeds, pumpkin seeds, cinnamon and chocolate chips in the food processor. Process until it is well mixed together, stopping occasionally to break up with the spoon. The mixture should be well-processed but still a little bit chunky.
2. Line your baking dish with the baking paper, ensuring it covers the whole surface area of the dish.
3. Carefully spoon the mixture into the dish, pressing down firmly with your wooden spoon.
4. Place your dish into a refrigerator for about an hour, or until the mixture is firm enough to slice with a knife and hold its shape.
This slice is the perfect go-to snack for Summer; it is both delicious on the lips and kind to the hips! Enjoy!
